I created this recipe after I found out my daughter could no longer eat sesame. It is quick and simple to make and tastes delicious. I often pack this for my daughter’s lunch with crackers, veggies and some fruit. Enjoy!
1 can garbanzo beans
1/3 cup of olive oil
1 garlic clove (crushed)
Optional: Paprika (sprinkle on top to add a little color)
Drain the chick peas and add to the food processor. Pour the olive oil into a small microwavable bowl and add the crushed garlic. Microwave the oil and garlic for 15 seconds. (This infuses the oil with garlic flavor and softens the garlic.) Add to processor. Add the juice of half of the lemon and blend until creamy. Note: if the hummus is too dry, slowly drizzle in more olive oil until creamy.
